My Favorite Friday Finds
Friday is here and it is a beautiful day in Colorado! Candace and I got to share in a special event with one of our dear friends this morning as she got married to the man God had been preparing for her. Her story is so amazing and maybe one day we will get to share it with you all. The wedding was so beautiful and definitely showed the true meaning of love and what marriage is about. Anyways I wanted to share with you some of my favorite finds for today. I just got this new book from my mom called "Keep Cookin' Cowgirl". This is definitely a fun book as it has different recipes, cowgirl sayings and advice in it. One of my favorites that I found for this morning was breakfast apples. Although this morning was quite chaotic at the Wegele house and we weren't able to even get a regular breakfast prepared. I'm not going to lie, sometimes this does happen and today my sons breakfast consisted of cheese crackers and an orange! This was definitely caused by "the rush" of the morning as Traycen and I were trying to get out of the house on time. So, long story short we will be trying this out tomorrow!
Breakfast- In a Cowgirl's world, breakfast is the most important meal of the day. A "stick-to-your-ribs" breakfast can make a long day in the saddle a little shorter, and you can ride a little farther.
This couldn't be more true in our house! We always eat a good breakfast to start the day. I once heard to start your day like this: Eat like a King for breakfast, a Queen for lunch and a Peasant for supper. Our morning breakfast ritual is normally fresh eggs from the coop and then either something with meat like bacon or sausage and then fresh fruits. Lately the little mans favorite is home-style potatoes with scrambled eggs.

Breakfast Apples
A hearty breakfast is the only way to start the day out West. This easy-to-do apple dish is good on its own but even better on top of oatmeal with a little cream. Guaranteed to help you get through the branding until lunch! You can also serve this over ice cream back at the ranch house fro dessert.
P.S: Save the peelings and cores for the horses, or at our house the chickens!!
Serves 6
-3 tablespoons butter
-3 medium tart apples, peeled, cored, quartered, and sliced
-1/3 cup sugar, plus 2-3 tablespoons
Melt the butter in a medium-heavy iron skillet over medium heat.
Add the apples to the skillet. Cover and cook for 5 minutes, or until the apples are juicy and browned. (If you are cooking theses over a campfire, use aluminum foil for the cover.)
Turn the apples and sprinkle with the 1/3 cup of sugar. Reduce the heat to low (or move the skillet on the grill of the campfire away from the direct heat).
Cover again and cook for a bout 5 minutes longer, or until the sugar is absorbed and the apples are lightly browned on the bottom.
Remove from the heat and sprinkle with the reserved sugar. Best served warm.
